Brazilian   -   Shrimp Moqueca   adapted from Brazilian Cookery by Margarette De Andrade

Ingredients
  • 2 Cloves Garlic -- Finely Chopped
  • 1/2 Teaspoon Salt
  • 1 Pound Shrimp
  • 1 Medium Onion -- Thinly Sliced
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Vinegar
  • 1 Tablespoon Parsley
  • 1 Can Tomato Paste
  • Pepper -- To Taste
  • 2 Tablespoons Dende Oil
  • 1/2 Cup Coconut Milk
Directions Combine garlic, salt and shrimp. Let stand for 15 minutes. Combine onion, lemon juice, vinegar, parsley, tomato paste and pepper. Mix in dende oil and shrimp mixture. Add coconut milk and bring to a simmer. Cook until shrimp is done and serve over rice.
