Bulgarian - Agnesko S Presni Kartofi (Lamb With Young Potatoes)

Ingredients
|
- 1 Pound Lamb -- Cubed
- 3 Tablespoons Olive Oil
- 1 Bunch Scallion -- Chopped
- 1 Tablespoon Flour
- Salt And Pepper -- To Taste
- 1 Can Tomato Paste
- 1 Teaspoon Paprika
- 1 Cup Hot Water
- 2 Pounds New Potatoes
- 2 Tablespoons Dill -- Snipped
- 2 Tablespoons Parsley -- Chopped

Directions
|
Saute lamb in oil until browned. Add scallions and saute for 5 minutes. Sprinkle with flour, salt and pepper. Stir in tomato paste and paprika. Saute for 1 minute. Add water and simmer for 30 minutes. Add potatoes and simmer for 20 minutes. Sprinkle with dill and parsley, serve over rice or pasta.
