Bulgarian - Cloisters Style Vegetable Soup (Monastrika Corba)

Ingredients

- 2 Cans Beans -- Any Kind
- 2 Tablespoons Olive Oil
- 1 Can Tomato Paste
- 2 Small Carrot -- Chopped
- 1 Small Celeriac -- Chopped
- 2 Slices Bacon -- Chopped
- 2 Medium Jalapeno -- Chopped
- 8 Large Mint Leaves -- Chopped
- 1 Tablespoon Parsley -- Chopped
- 1 Quart Chicken Stock

Directions

Saute in oil, tomato paste, carrots, celeriac, bacon and jalapenos for 10 minutes. Add stock, beans, and mint. Simmer for 10 minutes. Add parsley and serve.
