Ingredients
  • 2 Cans Beans -- Any Kind
  • 2 Tablespoons Olive Oil
  • 1 Can Tomato Paste
  • 2 Small Carrot -- Chopped
  • 1 Small Celeriac -- Chopped
  • 2 Slices Bacon -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • 8 Large Mint Leaves -- Chopped
  • 1 Tablespoon Parsley -- Chopped
  • 1 Quart Chicken Stock
Directions Saute in oil, tomato paste, carrots, celeriac, bacon and jalapenos for 10 minutes. Add stock, beans, and mint. Simmer for 10 minutes. Add parsley and serve.
