Bulgarian   -   Dr. Orahovats' Pork And Leek Yakniya (Stew)   adapted from Bulgarian Rhapsody By Linda Joyce Forristal

  • 2 Pounds Pork -- cubed
  • 3 Tablespoons Butter
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1 Medium Onion -- finely chopped
  • 1 Teaspoon Paprika
  • 8 Ounces Tomato Sauce
  • 1 Cup Water
  • 3 Large Leeks -- finely chopped
  • 1 Cup Water
  • 1 Teaspoon Greek Oregano
  • 7 Teaspoons Lemon Juice
  • 1 Tablespoon Flour
Directions Brown pork in butter until carmelized. Season with salt and pepper. Remove and set aside. Add onion and cook until transparent. Add paprika and cook for 3 minutes. Add tomato sauce, water and pork. Simmer for 30 minutes. Add leeks and another cup of water. Simmer for 30 minutes. Add oregano. Mix lemon juice with flour and incorporate into the soup. Simmer for 5 more minutes and serve with boiled potatoes.
