Bulgarian - Pirinska Jachnija (Mutton And Mushrooms)

Ingredients
|
- 1 Pound Mutton -- Cubed
- 2 Tablespoons Olive Oil
- 2 Large Onion -- Chopped
- 1 Can Tomatoes -- Chopped
- Salt And Pepper -- To Taste
- 1 Teaspoon Paprika
- 2 Cups Beef Broth
- 1/2 Cup Mushroom -- Sliced
- 1/2 Cup Olives -- Chopped
- 5 Medium Potato -- Cubed
- Parsley -- To Taste

Directions
|
Saute mutton in oil for 5 minutes. Add onions and saute for 5 minutes. Add tomatoes, salt, pepper and paprika. Saute 1 minute. Add broth and simmer for 30 minutes. Add mushrooms and simmer for 10 minutes. Add olives and bring to a boil. Add potatoes and simmer for 20 minutes. Sprinkle with parsley and serve with rice or pasta.
