Bulgarian - Rice And Zucchini Mousaka

Ingredients

- 1 Bunch Green Onion -- finely chopped
- 1/4 Cup Olive Oil
- 2 Tablespoons Water
- 7 Small Zucchini -- diced
- 2 Medium Tomatoes -- diced
- 1 Cup Uncooked Rice
- 1 Teaspoon Salt
- 1 Teaspoon Paprika
- 1 Teaspoon Pepper
- 4 Cups Water
- 4 Medium Eggs
- 1 Pint Plain Yogurt
- 1/2 Teaspoon Salt
- 1 Tablespoon Fresh Dill
- 1 Tablespoon Parsley

Directions
|
Saute green onions in oil and water. Cover and cook until soft. Transfer onions to baking dish, add zucchini, tomatoe, rice, salt, paprika, pepper and water. Mix well. Cover with foil and bake in preheated 400 degree oven for 30 minute or until rice is done. Beat eggs into yogurt, add salt, dill and parsley. Remove foil from mousaka and pour on topping. Return to oven and cook for 30 minutes or until topping is firm and starting to brown.
