Bulgarian   -   Simona's Mousaka (Beef And Potato)   adapted from Bulgarian Rhapsody By Linda Joyce Forristal

  • 6 Large Potatoes -- cubed
  • 2 Pounds Ground Beef
  • 1 Medium Onion -- finely chopped
  • 2 Medium Carrots -- finely chopped
  • 1 Teaspoon Salt
  • 2 Tablespoons Paprika
  • 1 Tablespoon Oregano
  • 16 Ounces Diced Tomatoes
  • 3 Medium Eggs
  • 1 Teaspoon Salt
  • 1/2 Cup Flour
  • 1/2 Cup Milk
Directions Saute meat and onion until well browned. Add potatoes and carrots. Fry until potatoes turn a golden brown. Add salt and spices. Mix well. Add tomatoes and mix well. Pour into a greased 9x13 inch baking dish. Bake in a preheated 400 degree oven for 1 hour. Beat eggs and add salt. Gradually add flour until the mixture is thick but not a dough. Add enough milk to make a batter that is easily poured over the mousaka. Return to the oven and bake until the top sets.
