British   -   Cormarye (Pork In Cormarye)   adapted from De Bors Hede Boke of Cookry

  • 2 Teaspoons Coriander
  • 2 Teaspoons Caraway
  • 1/2 Teaspoon Pepper
  • 1 Clove Garlic -- Finely Chopped
  • 1/2 Teaspoon Salt
  • 2 Cups Red Wine
  • 2 Pounds Pork Loin Roast
  • 1 Cup Beef Broth
Directions Marinate pork in coriander, caraway, pepper, garlic, salt and red wine overnight. Place pork in 325 degree oven for 2 hours. Bring broth to a boil in a small saucepan, add roast drippings and stir until it thickens. Serve over the roast.
