Ingredients

- 1 Pound Beef -- Cubed
- 2 Pounds Ham -- Cubed
- 2 Medium Onion -- Chopped
- 2 Medium Carrot -- Chopped
- 2 Medium Parsnip -- Chopped
- 1 Medium Turnip -- Chopped
- 2 Stalks Celery -- Chopped
- 1 Pound New Potatoes
- 2 Medium Leeks -- Chopped
- 1 Tablespoon Thyme
- 3 Tablespoons Olive Oil
- Salt And Pepper -- To Taste
- 10 Cups Beef Broth

Directions
|
Saute beef and ham in oil until well browned. Add onion, carrots, parsnips, turnip, and celery. Saute for 5 minutes. Add broth and leeks. Simmer for at least an hour up to 5 if desired. Add potatoes and simmer for 30 minutes. Season with salt and pepper and serve.
