British - Hereford Cider Cake

Ingredients
|
- 8 Tablespoons Unsalted Butter -- softened
- 1/2 Cup Sugar
- 3 Medium Eggs
- 2 1/4 Cups Flour
- 1/2 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/4 Teaspoon Nutmeg -- grated
- 2/3 Cup Country Cider
- 1 Tablespoon Confectioner's Sugar

Directions

Preheat oven to 375 degrees. In mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, beat well. Sift together flour, baking powder and soda. Fold into the egg mixture. Stir in nutmeg and gradually pour in cider. Spoon batter into a 8 inch cake pan and bake for 25 minutes. All cake to cool and dust with sugar. Serve.
