British - Stelline And Zucchini Soup

Ingredients
|
- 2 Tablespoons Butter
- 2 Medium Onion -- chopped
- Salt And Pepper -- to taste
- 3 Small Zucchini -- 1/4 cubes
- 6 Cups Chicken Broth
- 1/2 Cup Stelline -- cooked
- 1 Medium Egg
- 1/2 Cup Gloucester Cheese -- grated
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Parsley -- finely chopped

Directions
|
saute in butter, the onion for 5 minutes. add salt and pepper. stir in zucchini and broth. boil, reduce heat and simmer uncovered for 3 minutes. beat together egg, lemon juice, cheese and 1/2 cup of the soup liquid. Then add it back to the soup. serve sprinkled with parsley.
