British   -   Stelline And Zucchini Soup   adapted from The world of Pasta

  • 2 Tablespoons Butter
  • 2 Medium Onion -- chopped
  • Salt And Pepper -- to taste
  • 3 Small Zucchini -- 1/4 cubes
  • 6 Cups Chicken Broth
  • 1/2 Cup Stelline -- cooked
  • 1 Medium Egg
  • 1/2 Cup Gloucester Cheese -- grated
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Parsley -- finely chopped
Directions saute in butter, the onion for 5 minutes. add salt and pepper. stir in zucchini and broth. boil, reduce heat and simmer uncovered for 3 minutes. beat together egg, lemon juice, cheese and 1/2 cup of the soup liquid. Then add it back to the soup. serve sprinkled with parsley.
