British   -   Teisen Fel (Honey Cake) (Wales)   adapted from Traditional Food from Wales by Bobby Freeman

  • 4 Ounces Honey
  • 1 Teaspoon Cinnamon
  • 4 Ounces Brown Sugar
  • 1 Medium Egg -- Separated
  • 1/2 Pound Flour
  • 1/2 Teaspoon Baking Soda
  • 4 Ounces Butter
  • Sugar
Directions Combine flour, cinnamon and soda. Cream together, butter and brown sugar. Beat in egg yolk. Add honey gradually. Stir in flour mixture add milk if necessary. Beat egg white until stiff. Fold into mixture. Pour into a baking pan, sprinkle liberally with sugar. Bake at 400 degrees for 20 minutes.
