British   -   Welsh Lamb Pie   adapted from Traditional Food from Wales by Bobby Freeman

  • 2 Pounds Lamb -- Cubed
  • 1 Tablespoon Parsley -- Chopped
  • 4 Medium Carrot -- Chopped
  • Salt And Pepper -- To Taste
  • 2 Medium Pie Crust
  • 2 Cups Beef Broth
Directions Bring lamb, parsley, carrot, salt, pepper and broth to a boil. Simmer for 1 hour. Place pie crust in pie pan, add lamb mixture. Top with other pie crust. Vent and bake in 400 degree oven for 30 minutes or until crust is browned.
