British   -   Ypocras (Spiced Wine)   adapted from De Bors Hede Boke of Cookry

Ingredients
  • 2 Bottles Red Wine
  • 1/2 Cup Sugar
  • 1 Stick Cinnamon
  • 1 Inch Ginger -- Peeled
  • 1/2 Inch Galangal -- Peeled
  • 4 Whole Cloves
  • 1/4 Teaspoon Nutmeg
  • 1/8 Teaspoon Majoram
  • 1/8 Teaspoon Cardamom
  • 1/4 Teaspoon Grains Of Paradise -- Optional
Directions In large container, add sugar to wine, stir until dissolved. Grind herbs and spices. Add to wine. Mix well. Refrigerate overnight or up to 4 days. Strain and serve.
