Burmese - Beef In Tamarind Sauce

Ingredients

- 2 Medium Onion -- sliced
- 4 Cloves Garlic -- sliced
- 2 Inch Ginger Root -- sliced
- 3 Cups Water
- 2 Pounds Boneless Beef Chuck -- cubed
- 1 Teaspoon Salt
- 1/4 Cup Peanut Oil
- 1 1/3 Tablespoons Fish Sauce
- 1/2 Teaspoon Turmeric
- 2 Teaspoons Paprika
- 2 Teaspoons Tamarind Paste -- soaked and strained
- Hot Sauce -- to taste

Directions
|
Process the onion, garlic, ginger and 1/4 cup of the water to a coarse paste. Put the paste, beef, salt, oil, fish sauce, turmeric, and paprika in a pan and mix well. Let stand for 15 minutes. Cook the beef covered over moderate heat for 15 minutes. Stir well and add balance of water. Bring to boil. Cook beef until tender about 1 hour. Add tamarind liquid, cook 10 more minutes. Serve with rice.
