Burmese - International Express Rice (Burma)

Ingredients

- 2 Tablespoons Olive Oil
- 1 Small Onion -- finely chopped
- 1 Small Green Pepper -- finely chopped
- 3 Cloves Garlic -- finely chopped
- 1 Large Red Chiles -- chopped
- 1 Pound Chicken Breast -- sliced thin
- 1 Tablespoon Oyster Sauce
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Fish Sauce
- 1/2 Teaspoon Black Pepper
- 2 Cups Cooked Rice -- refrigerate overnigh
- 1 Cup Bean Sprouts
- 2 Medium Scallion -- chopped
- 1 Medium Egg -- room Temp.
- 2 Tablespoons Fish Sauce
- 2 Tablespoons Cilantro -- chopped
- 1/2 Teaspoon Five Spice Powder

Directions

heat oil in wok until very hot. add onion, bell pepper, garlis and chile. stir-fry for 2 minutes. add meat and cook for 3 minutes. add oyster sauce, soy sauce, fish sauce, and black pepper. cook for 1 minute. add rice and cook for 3 minutes. add sprouts and scallions. cook, shaking the pan for 1 minute. lift ingredients from bottom of pan, and slide egg underneath and cook for 1 minute. remove from heat and turn over so the egg is on top. combine the pickled jalapenos, fish sauce, and cilantro. spoon over top.
