Burmese   -   Peeled Lima Bean Soup   adapted from Recipes From The Golden Land The Burmese Kitchen by Marks

  • 1 Cup Peeled Lima Beans -- see note
  • 1/4 Teaspoon Ground Turmeric
  • 1 Tablespoon Peanut Oil
  • 3 Cups Water
  • 1 Small Onion -- thinly sliced
  • 1 Teaspoon Salt
  • 1 Tablespoon Fish Sauce
  • 1/2 Bunch Watercress
Directions Put the lima beans, turmeric and oil over large pot and stir fry for 5 minutes. Add water and bring to a boil. Cook in covered pan until limas are soft about 30 minutes. Add onion, salt and fish sauce. Cook for 5 minutes. Put several watercress sprigs in each serving bowl and pour soup over the top.
Serves 6
