Burmese   -   Pork Stew In Black Bean Sauce   adapted from Recipes From The Golden Land The Burmese Kitchen by Marks

  • 2 Pounds Boneless Pork -- cubed
  • 1 Medium Onion -- finely chopped
  • 5 Cloves Garlic -- chopped
  • 1 Inch Ginger -- chopped
  • 1 Tablespoon Paprika
  • 2 Teaspoons Red Pepper Flakes
  • 1 Teaspoon Shrimp Paste
  • 3 Tablespoons Fish Sauce
  • 1 Cup Fermented Black Bean Paste -- miso
  • 2 Tablespoons Peanut Oil
  • 2 1/2 Cups Water
Directions Mix all ingredients together with 1/2 cup of the water. Marinate for 15 minutes. Bring to a boil. Cook in a covered pan over moderate heat for 20 minutes. Add remaining water, Return to a boil. Cook covered over moderate heat for 45 minutes. The sauce will reduce to about 1 cup. serve with rice.
