Burmese   -   Simple Fish Curry   adapted from Recipes From The Golden Land The Burmese Kitchen by Marks

  • 1 Pound Fish Fillets -- cut into 2" pieces
  • 1/4 Teaspoon Turmeric
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Fish Sauce
  • 3 Tablespoons Peanut Oil
  • 1 Small Onion -- sliced
  • 1 Clove Garlic -- finely chopped
  • 1/2 Inch Fresh Ginger Root -- finely chopped
  • 1/2 Teaspoon Paprika
  • 1 Medium Tomato -- chopped
  • 1/4 Cup Water
  • 1 Tablespoon Fresh Cilantro -- chopped
Directions Marinate fish in turmeric, salt, and 1 tablespoon of fish sauce. Let stand for 15 minutes. Heat oil in a large skillet, saute onion, garlic and ginger until light brown. Stir in paprika. Add tomato and remaining fish sauce. Stir fry 2 minutes. Add fish pieces one by one, fry 2 minutes without turning. Add water and shake pan vigorously to mix flavors. Do not stir or fish will break up. Cook for 2 more minutes. Sprinkle with cilantro and serve over rice.
