Burmese   -   Special Chicken Salad Of The Moon   adapted from Recipes From The Golden Land The Burmese Kitchen by Marks

  • Broth Ingredients
  • 3 Pounds Chicken -- with giblets
  • 6 Cups Water
  • 3 Stalks Lemon Grass -- halved
  • 1 Tablespoon Fish Sauce
  • 1/2 Teaspoon Salt
  • 1 Inch Fresh Ginger Root -- sliced
  • Salad Ingredients
  • 1 Large Jalapeno -- thinly sliced
  • 2 Tablespoons Cilantro -- chopped
  • 2 Tablespoons Lemon Juice
  • 2 Teaspoons Shrimp Paste
Directions Cook broth ingredients in large pan over moderate heat for 30 minutes and then let stand for 15 more minutes. Remove chicken and cool. Pull meat off the bones and discard bones. Shred the meat. It should make about 4 cups. Strain broth and reserve 2 cups. Mix meat, 2 cups broth, and salad ingredients and serve in bowls warm or room temperature.
