Burmese   -   Tomato Chutney   adapted from Recipes From The Golden Land The Burmese Kitchen by Marks

  • 2 Tablespoons Peanut Oil
  • 1/4 Teaspoon Ground Turmeric
  • 1/2 Teaspoon Paprika
  • 1 Small Onion -- sliced
  • 1 Clove Garlic -- sliced
  • 1 Tablespoon Shrimp Powder
  • 1 Teaspoon Shrimp Paste
  • 1 Tablespoon Fish Sauce
  • 2 Tablespoons Water
  • 1 Large Ripe Tomato -- cut in 1-inch pieces
  • 1 Large Hot Chili Peppers -- seeded and chopped
  • 1 Medium Scallion -- chopped
  • 1 Tablespoon Cilantro -- chopped
Directions Heat the oil in a skillet. Add turmeric, paprika, onion and garlic. Stir fry until onion is golden. Add shrimp powder and paste. Stir-fry 2 minutes. Add fish sauce, water and tomato. Stir-fry 5 minutes. Add remaining ingredients and stir well. Serve at room temperatue.
