Cambodian - Red Pork With Coconut Milk On French Bread

Ingredients

- 1/4 Cup Olive Oil
- 1/2 Pound Ground Pork
- 1 Large Anaheim Chili Pepper -- dried and ground
- 8 Cloves Garlic -- sliced
- 1 Large Shallot -- thinly sliced
- 1 Cup Coconut Milk
- 1/4 Cup Sugar
- 1/4 Cup Peanuts -- optional
- 1 Tablespoon Fish Sauce
- 1/2 Teaspoon Salt
- French Bread Loaf -- sliced and toasted

Directions

Heat oil in skillet, add pork and chili powder. Saute for 3 minutes. Add garlic and shallot. Saute for 1 minute. Add milk, sugar, peanuts, fish sauce and salt. Cook for 10 minutes. Serve over the bread.
