Cambodian   -   Red Pork With Coconut Milk On French Bread   adapted from The Elephant Walk Cookbook

  • 1/4 Cup Olive Oil
  • 1/2 Pound Ground Pork
  • 1 Large Anaheim Chili Pepper -- dried and ground
  • 8 Cloves Garlic -- sliced
  • 1 Large Shallot -- thinly sliced
  • 1 Cup Coconut Milk
  • 1/4 Cup Sugar
  • 1/4 Cup Peanuts -- optional
  • 1 Tablespoon Fish Sauce
  • 1/2 Teaspoon Salt
  • French Bread Loaf -- sliced and toasted
Directions Heat oil in skillet, add pork and chili powder. Saute for 3 minutes. Add garlic and shallot. Saute for 1 minute. Add milk, sugar, peanuts, fish sauce and salt. Cook for 10 minutes. Serve over the bread.
