Cambodian   -   Stir Fried Zucchini & Pork (Cha Clohk Nung Saik Chrouk)   adapted from The Elephant Walk Cookbook

  • 3 Tablespoons Peanut Oil
  • 3 Cloves Garlic -- finely chopped
  • 1/2 Pound Pork
  • 2 Tablespoons Fish Sauce
  • 1 Teaspoon Sugar
  • 2 Pounds Zucchini -- julienned
  • 1 Large Egg -- beaten
  • 1 Bunch Scallions -- finely chopped
  • 1/2 Teaspoon Pepper
Directions Heat oil in large skillet, cook garlic 10 seconds. Add pork,, fish sauce, sugar and zucchini, cook 3 minutes, breaking up pork. Add egg and stir until egg is set. Remove from heat, sprinkle with scallions and peppers and serve.
