Chilean   -   Cabbage Soup With Cheese And Spices (Chile)   adapted from The Art of South American Cooking

  • 2 Tablespoons Butter
  • 1 Small Green Cabbage -- finely chopped
  • 1 Large Baking Potatoes -- peeled and cubed
  • 3 Medium Scallion -- finely chopped
  • 5 Cups Chicken Stock
  • Nutmeg -- to taste
  • Allspice -- to taste
  • Salt And Pepper -- to taste
  • 1 Cup Munster Cheese -- grated
  • Paprika -- for garnish
Directions Melt the butter in a large pot, Add cabbage, potato and scallions. Cook and stir for 4 minutes. Add the stock and simmer, covered for about 30 minutes. Do not overcook and allow the cabbage to become soggy. Season to taste with nutmeg, allspice, salt and pepper. Stir in cheese just before serving. Dust each serving with paprika and serve.
