Ingredients
  • 4 Medium Potato -- Cubed
  • Salt And Pepper -- To Taste
  • 1/2 Cup Peas
  • 1/2 Cup French-Style Green Beans
  • 1 Medium Acorn Squash -- Cubed
  • 1 Medium Jalapeno -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Paprika
  • 1 Medium Onion -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Cup Corn
  • 1/2 Pound Chariqui Or Dried Beef
  • 1 Teaspoon Parsley -- Chopped
  • 4 Cups Chicken Broth
Directions Boil potatoes in broth for 10 minutes. Add peas, beans and squash. Simmer for 10 minutes. Saute jalapeno in oil for 5 minutes. Add paprika and onion and saute for 10 minutes. Add the tomato to the onion mixture and saute for 10 minutes. Add corn and saute for 5 minutes. Add dried beef to the broth and simmer for 5 minutes. Add tomato mixture to the stew, sprinkle with parsley and serve.
