Ingredients
  • 1 1/2 Cups Lentils
  • 4 Cups Chicken Broth
  • Salt And Pepper -- To Taste
  • 1 Teaspoon Olive Oil
  • 1/2 Pound Chorizo -- Chopped
  • 1 Medium Onion -- Chopped
  • 1 Medium Carrot -- Chopped
  • 1 Medium Jalapeno -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1 Teaspoon Paprika
  • 1/2 Teaspoon Cumin
  • 1 Teaspoon Oregano
  • 1/2 Cup Rice
  • 1 Tablespoon Parsley -- Chopped
  • 2 Medium Hard-Boiled Egg -- Chopped (Optional)
Directions Bring lentils and broth to a boil. Season with salt and pepper. Simmer for 15 minutes. Saute chorizo, onion and carrot in oil for 3 minutes. Add garlic, jalapeno, paprika, cumin and oregano. Season with salt and pepper. Simmer for 1 minute. Stir the onion mixture into the lentils. Add rice and simmer for 20 minutes. Place in serving bowls, sprinkle with parsley and egg. Serve.
