Ingredients
|
- 2 Pounds Potatoes -- peeled
- 1 Cup Green Beans -- chopped
- 2 Large Carrots -- cubed
- 1 Large Aji Pepper -- chopped
- 1 Small Red Pepper -- cubed
- 2 Medium Onions -- chopped
- 3 Cloves Garlic -- chopped
- 1 Tablespoon Paprika
- 1 Teaspoon Oregano
- 1/2 Cup Olive Oil
- 2 Cups Corn
- 2 Cups Pumpkin -- cubed
- 6 Medium Tomatoes -- chopped

Directions
|
Simmer potatoes, beans, carrots, aji, and bell pepper for 15 minutes in enough water to cover. Saute onions, garlic, paprika and oregano in oil til tender. After potatoes have simmered, add onion mixture, corn and pumpkin, simmer 10 minutes. Add tomatoes, simmer 5 minutes and serve.
