Chilean   -   New World Stew   adapted from Three Generations of Chilean Cuisine by M Umana-Murray

Ingredients
  • 2 Pounds Beef Round -- cubed
  • 1 Cup Beef Stock
  • 1 Teaspoon Spanish Paprika
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Cup Pumpkin -- diced
  • 3 Medium Potatoes -- diced
  • 1 Teaspoon Alino
  • 1 Teaspoon Cumin
  • Salt And Pepper -- to taste
  • 2 Tablespoons Olive Oil
  • 1 Package Frozen Green Beans
  • 1 Package Frozen Corn
  • 1 Tablespoon Parsley -- finely chopped
Directions Simmer beef in sotck 1 hour. remove beef and shredd, reserve liquid. Saute beef, paprika, onion, garlic, pumpkin, potatoes, alino, cumin, salt and pepper io oil, 10 mins. Add reserved liquid, simmer 15 minutes. Add corn and green beans, cook 5 minutes. Top with parsley and server.
