Chilean   -   Pancutras (Rich Broth With Fresh Pasta)   adapted from The Chilean Kitchen by Ruth Van Waerbeek-Gonzales

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Medium Carrot -- Chopped
  • 6 Cups Beef Broth
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Parsley -- Chopped
  • 1 Pound Fresh Pasta
Directions Saute onion, garlic, bell pepper, and carrot in oil for 3 minutes. Add broth, salt and pepper. Bring to a boil, reduce heat and simmer for 10 minutes. Return soup to a boil add pasta. Simmer until pasta is done, 3 minutes for fresh pasta. Sprinkle with parsley and serve.
