Chilean   -   Pastel De Zapallitos   adapted from Three Generations of Chilean Cuisine by M Umana-Murray

  • 1 Cup Bread Crumbs
  • 1 Cup Milk
  • 6 Medium Zucchini
  • 1 Cup Beef Stock Or Water
  • 1 Medium Onion -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 3 Tablespoons Olive Oil
  • 2 Medium Eggs -- beaten
  • 1 Cup Parmesan Cheese -- grated
  • Salt And Pepper -- to taste
  • 1/2 Cup Bread Crumbs
Directions Preheat oven to 375*. Soak bread in milk 5 minutes. Blanche zucchini in boiling stock 5 minutes. Remove zucchini, reduce stock to 1/2 cup, then add to bread mixture. Saute onion and garlic in oil. Add bread mixture, zucchini, eggs, 1/2 cheese, salt and pepper. Simmer 5 minutes. Spread into buttered baking dish. Sprinkle with remaining cheese and bread crumbs, bake 30 minutes.
