Chilean   -   Porotos Granados De La Senora Pilar (Lima Bean Casserole)   adapted from The Chilean Kitchen by Ruth Van Waerbeek-Gonzales

  • 2 Pounds Lima Beans -- Cooked
  • 2 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 1/2 Bunch Basil -- Chopped
  • 2 Cans Chicken Broth
  • 1 Medium Winter Squash -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Cup Corn
  • 1 Medium Bell Pepper -- Chopped
  • 1 Tablespoon Basil
Directions Saute fresh basil, bell pepper and tomato in oil for 5 minutes. Add broth and squash, simmer for 20 minutes. Add corn and beans, simmer for 5 minutes. Season with salt and pepper. Serve sprinkled with the remaining basil
