Chilean - Salsa De Tomates

Ingredients
|
- 2 Tablespoons Olive Oil
- 1 Medium Onion -- finely chopped
- 1 Cup Mushroom -- chopped
- 1 Large Red Pepper -- chopped
- 2 Pounds Plum Tomatoes -- chopped
- 3 Medium Bay Leaf
- 2 Tablespoons Dried Oregano
- 1/2 Cup Red Wine
- 1 Tablespoon Soy Sauce
- 6 Cloves Garlic -- finely chopped
- Pepper -- to taste

Directions
|
Saute onion and pepper in oil until tender. Add mushrooms and saute until soft. Add remaining ingredients except garlic and black pepper. Bring to boil. Reduce heat and simmer slowly for 1 hour or until reduced to the desired thickness. At the last minute add the garlic and pepper.
