Canadian   -   Baked Halibut With Tarragon Crust   adapted from The Flavors of Canada by Anita Stewart

  • 1 Cup Sour Cream
  • 3 Tablespoons Tarragon -- Chopped
  • 1 Bunch Scallion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 1 Dash Hot Sauce
  • 1 Dash Worcestershire Sauce
  • Pepper -- To Taste
  • 1 Cup Bread Crumbs
  • 1/2 Cup Parmesan Cheese
  • 1/2 Cup Swiss Cheese -- Shredded
  • 1/4 Cup Parsley -- Chopped
  • 2 Pounds Halibut Steak
Directions Combine sour cream, tarragon, green onion, garlic, hot sauce, worcestershire sauce and pepper. In another bowl, combine bread crumbs, both cheeses, and parsley. Dip fish in sour cream mixture then roll in bread crumb mixture. Place on baking sheet and bake for 12 minute in 500 degree oven. Serve.
