Chinese   -   Broccoli And Almond Soup With Sesame   adapted from Soup and Bread by Crescent Dragonwagon

  • 1 Large Broccoli Head -- Chopped
  • 6 Cups Chicken Stock
  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 1/2 Cup Almonds -- Toasted
  • 3 Tablespoons Sesame Seeds
  • Salt And Pepper -- To Taste
  • 2 Teaspoons Sesame Oil
  • Sour Cream
Directions Bring stock to a boil, add broccoli and simmer for 10 minutes. Remove large broccoli chunks to a food processor. Saute onion in butter for 5 minutes. add garlic and saute for 1 minute. Add onion mixture to the processor along with almonds and sesame seeds. Process until smooth. Add back to the broth. Season with salt, pepper and sesame oil. Serve with dollop of sour cream.
