Chinese   -   Chicken Madagascar   adapted from Dining with Headhunters

  • 2 Tablespoons Sweet Butter
  • 1 Pound Chicken Breast -- diced
  • 2 Medium Scallion -- 1/4 inch dice
  • 1 Ounce Peppermint Schnapps
  • 1/2 Cup Half And Half
  • 2 Tablespoons Green Peppercorns -- rinsed
  • Salt -- to taste
Directions melt butter in a large skillet and brown the chicken. add scallions and cook for 10 minutes. add schnapps and when schnapps begins to sizzle, set it alight. shake pan until the flames die down. add cream and peppercorns. Bring to a boil. salt to taste and serve at once.
Serves 4
