Chinese   -   Egg Drop Soup   adapted from pasta

  • 4 Cans Chicken Broth
  • 1/2 Cup Thin Egg Noodles
  • 2 Eggs -- beaten
  • 1 Tablespoon Lemon Juice
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Bunch Scallions -- chopped
Directions bring chicken broth to boil. add noodles and boil for 5 minutes. reduce heat to simmer. stir eggs, lemon juice, salt and pepper together. Slowly add to chicken broth. stirring constantly. simmer for 1 minute. add scallions and serve.
