Chinese   -   Eggs With Mushrooms And Broccoli   adapted from Cantonese Chinese Cooking by Margaret Leeming

  • 4 Medium Eggs -- Beaten
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Butter
  • 4 Medium Shiitake Mushrooms -- Chopped
  • 1/2 Bunch Broccoli -- Chopped
  • 3 Medium Green Onion -- Chopped
  • 1/4 Teaspoon Ginger
  • 1 Tablespoon Rice Wine
  • 1 Teaspoon Soy Sauce
  • 1/2 Teaspoon Sesame Oil
Directions saute eggs in butter, season with salt and pepper until just set. keep warm. saute mushrooms, broccoli, onions and ginger in sesame oil for 5 minutes. Add eggs to broccoli mixture, stir well, breaking up eggs. season with rice wine and soy sauce and serve.
