Chinese   -   Hot And Sour Soup   adapted from gourmet vinegars

  • 1/2 Pound Pork -- cubed
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Sugar
  • 1 Teaspoon Ginger Root
  • 1 Teaspoon Peanut Oil
  • 8 Ounces Mushrooms -- chopped
  • 1/2 Pound Tofu -- cubed
  • 6 Cups Chicken Broth
  • 3/4 Cup Gourmet Vinegar
  • 1/2 Cup Soy Sauce
  • 3 Tablespoons Cornstarch
  • Salt And Pepper -- to taste
  • 2 Large Eggs -- beaten
  • 1 Bunch Green Onions -- chopped
Directions Marinate pork in soy sauce, sugar and ginger root for 15 minutes. Darin and then saute in peanut oil until cooked. Add mushrooms, allow to saute 2 minutes. Add all other ingredients except eggs and cornstarch, simmer 10 minutes. Combine cornstarch with a little water, add to soup, bring to boil. Reduce to simmer. Add beaten eggs slowly stirring to make threads.
