Chinese   -   Marinated Pork Fried Rice   adapted from Betty Crockers New International Cookbook

Ingredients
  • 1/2 Pound Pork -- 1/2" cubes
  • 1/4 Cup Unsweetened Pineapple Juice
  • 1/2 Teaspoon Ginger Root -- grated
  • Hot Sauce -- to taste
  • 2 Cloves Garlic
  • 1 Medium Onion -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 2 Tablespoons Soy Sauce
  • 3 Cups Cooked Rice
  • 1 Large Egg
Directions Marinate pork in pineaple juice, ginger root, pepper sauce and garlic. Cover refregerate 1 hour, no longer than 12 hours. Remove pork from marinade. Saute Pork, onion and bell pepper in non-stick cooking spray, until onion is tender. Add soy sauce and rice, Cook about 10 minutes stirring constantly until rice is golden. Add egg and stir well until egg is cooked and mixed throughout.
