Chinese   -   Winter Mushroom Soup   adapted from Cantonese Chinese Cooking by Margaret Leeming

  • 6 Large Shiitake Mushrooms -- Chopped
  • 3 Cups Chicken Stock
  • 2 Teaspoons Olive Oil
  • 1/2 Teaspoon Sugar
  • 1/2 Teaspoon Ginger
  • 1 Bunch Scallion -- Chopped
  • 1 Teaspoon Soy Sauce
  • Salt And Pepper -- To Taste
Directions Place all ingredients in ovenproof casserole dish, bake at 375 degrees for 1 hour. (Yes it's weird)
