Central American   -   Costa Rican Cabbage Salad   adapted from global vegetarian

  • 2 Cups Cabbage -- shredded
  • 2 Large Tomatoes -- chopped
  • 1 Small Cucumber -- peeled and chopped
  • 2 Tablespoons Cilantro -- chopped
  • 1 Lemon Lemon Juice
  • 1 Tablespoon Olive Oil
  • Salt And Pepper -- to taste
Directions mix together and let sit for 30 minutes but overnight is best.
