Central American   -   Costa Rican Chicken Tortilla Nuggets   adapted from The Universal Kitchen by Elisabeth Rozin

  • 1 Medium Onion -- Chopped
  • 4 Cloves Garlic -- Chopped
  • 2 Medium Serrano Pepper -- Chopped
  • 1 Large Bell Pepper -- Chopped
  • 1 Lime Lime Juice
  • 1/2 Cup Cilantro -- Chopped
  • 1 Medium Egg
  • 1 Pound Ground Chicken
  • 3/4 Cup Masa Harina
  • 1 1/2 Teaspoons Salt
  • 1 Teaspoon Hot Sauce
  • 1/2 Teaspoon Oregano
  • 2 Tablespoons Olive Oil
Directions Combine onion, garlic, chiles, bell pepper, lime juice and cilantro in a food processor. Process to a paste. Beat the egg and then add the paste. Mix well. Add chicken, masa harina, salt, hot sauce, and oregano. Mix well and refrigerate for 2 hours. Roll meat into walnut sized shapes. Saute in oil in batches until well browned. Serve with tortillas and salsa.
