Ingredients

- 1 Tablespoon Olive Oil
- 1/2 Pound Pork -- cubed
- 1 Medium Onion -- thinly sliced
- 1 Clove Garlic -- finely chopped
- 1 Medium Tomato -- finely chopped
- 1 Small Green Pepper -- finely chopped
- 3 Medium Bay Leaf
- 1 Teaspoon Cilantro -- finely chopped
- 1 Teaspoon Cumin
- 1 Tablespoon Paprika
- 1/2 Teaspoon Cayenne
- 1/4 Teaspoon Pepper
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Oregano
- 1 Pound Red Beans -- cooked with liquid
- 2 Teaspoons Parmesan Cheese -- grated
- 3/4 Cup Sour Cream

Directions
|
Heat oil in pan and saute pork until well browned. Add onion, garlic, tomato and bell pepper. Fry for 10 minutes. Add bay leaves, cilantro, cumin, paprika, cayenne, pepper, sugar and oregano. Saute for 2 minutes. Add beans and liquid. Mix well. Simmer for 1 hour on low. You may either puree the mixture at this point or just serve it with rice or tortillas, garnished with sour cream.
