Central American - Frijoles Guisados (El Salvador)

Ingredients
|
- 2 Tablespoons Olive Oil
- 1 Small Green Pepper -- finely chopped
- 1 Small Onion -- finely chopped
- 1 Teaspoon Salt
- 2 Cups Cooked Red Beans -- with liquid
- 1/4 Teaspoon Oregano
- 2 Teaspoons Parmesan Cheese -- grated
- Sour Cream -- to taste

Directions
|
Heat oil in skillet. Add green pepper, onion and salt. Fry for 2 minutes. Add beans and stir well. Mash 2 tablespoons of beans in corner of the skillet and use to provide thickening. Saute until beans are quite dry. Add oregano and mix well. Serve warm with sour cream accompanied by tortillas or tostados.
