Cuban - Arroz Y Frijoles Negros Con Sabor A Ron

Ingredients
|
- 2 Large Onion -- chopped
- 4 Cloves Garlic -- finely chopped
- 2 Stalks Celery -- chopped
- 1 Large Carrot -- chopped
- 1/4 Cup Olive Oil
- 8 Cups Water
- 1 Pound Black Beans -- soaked
- Salt And Pepper -- to taste
- 1/4 Cup Parsley -- chopped
- 2 Cups White Rice
- 1/4 Cup Dark Rum

Directions

In large saucepan saute oions, garlic celery and carrots 6 minutes. Add 4 cups water, bring to boil. Add beans, salt, pepper and parsley. Cover, reduce heat, simmer 1 1/2 hours. Add water if necessary. Make rice as usual. Add rum to beans, stir, layer over rice and serve.
