Cuban   -   Arroz Y Frijoles Negros Con Sabor A Ron   adapted from A Taste of Cuba by Linnette Creen

  • 2 Large Onion -- chopped
  • 4 Cloves Garlic -- finely chopped
  • 2 Stalks Celery -- chopped
  • 1 Large Carrot -- chopped
  • 1/4 Cup Olive Oil
  • 8 Cups Water
  • 1 Pound Black Beans -- soaked
  • Salt And Pepper -- to taste
  • 1/4 Cup Parsley -- chopped
  • 2 Cups White Rice
  • 1/4 Cup Dark Rum
Directions In large saucepan saute oions, garlic celery and carrots 6 minutes. Add 4 cups water, bring to boil. Add beans, salt, pepper and parsley. Cover, reduce heat, simmer 1 1/2 hours. Add water if necessary. Make rice as usual. Add rum to beans, stir, layer over rice and serve.
