Ingredients
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- minced
  • 2 Tablespoons Olive Oil
  • 1 Pound Dried Black Beans
  • 3 Cups Beef Broth
  • 3 Cups Water
  • 1 Cup Smoked Ham -- chopped
  • 1 Medium Green Pepper -- chopped
  • 1 Large Tomato -- chopped
  • 1/4 Cup Dark Rum
  • 1 1/2 Teaspoons Ground Cumin
  • 1 1/2 Teaspoons Oregano
  • 1 Habenero Pepper -- minced
Directions Saute onion and garlic, add remaining ingredients, heat to boiling, boil 2 minutes. Reduce heat, cover and simmer 2 hours. Beans do not need to be pre-soaked.
Serves 8
