Ingredients
  • 1 Lime Lime Juice
  • 1 Pound Shrimp
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 3 Medium Jalapeno -- Chopped
  • 2 Tablespoons Parsley -- Chopped
  • 1/2 Teaspoon Oregano
  • 1 Can Tomato Puree
  • 1 Medium Bay Leaf
  • 1/2 Teaspoon Cumin
  • 2 Teaspoons White Wine Vinegar
  • 1/2 Cup Water
  • Salt And Pepper -- To Taste
Directions marinate shrimp in lime juice for 15 minutes. Saute onion in oil for 5 minutes. Add garlic, peppers, parsley, and oregano, saute 5 minutes. Add tomato puree, simmer 5 minutes. Add remaining ingredients, including shrimp in marinade, simmer until Shrimp are done, serve, over rice.
