Cuban - Frijoles Negros Con Ron Y Miel Al Horno

Ingredients
|
- 12 Strips Bacon -- chopped
- 2 Large Onions -- chopped
- 1 Clove Garlic -- chopped
- 2 Cups Chicken Stock
- 1 1/2 Cups Cider Vinegar
- 1 In Ginger Root -- chopped
- Salt And Pepper -- to taste
- 1 Tablespoon Dry Mustard
- 1/2 Cup Honey
- 1/4 Cup Dark Brown Sugar
- 1/4 Teaspoon Clove
- 1/4 Teaspoon Cinnamon
- 1 Pound Black Beans -- soak
- 4 Cups Water
- 1/2 Cup Dark Rum

Directions

In heavy pan, fry bacon util crisop. Rmove, drain, allow to cool. Discard all but 2 tabs bacon grease. Saute onoions iand garlic in drippings 6 minutes. Add stock, vinegar, and all down to black beans. Bring to boil, Add water and beans to pan, stir utnil liqueid returns to boil. Turn heat to low, cover simmer 1 hour. Preheat oven to 275* Transfer to casserole dish with lid. Stir in rum, cover, bake 5 1/2 hours. Uncover, bake 30 minutes. Serve.
