Cuban - Frituras De Calabaza

Ingredients
|
- 1 1/2 Pounds Calabaza -- cubed
- 2 Tablespoons Butter
- 1 Medium Egg -- beaten
- 1/2 Cup Sugar
- 1/4 Teaspoon Nutmeg
- 1 1/2 Cups Flour
- Oil -- for frying
- Salt -- to taste

Directions
|
Place calabaza cubes in large saucepan with enough water to cover. Bring to a boil, cover and reduce heat to low and simmer for 20 minutes. Drain and mash. Measure, 1 1/2 cups of mashed calabaza into a large bowl. Add butter, egg, sugar and mix until butter is melted. Add the nutmeg and stir, then add the flour 1/2 cup at a time. Heat the oil in a deep fryer to 375 degrees. Drop the dough 1 tablespoon at a time into the hot oil. Fry fritters a few at a time until lighltly browned. Remove and place on paper towels to drain. Sprinkle lightly with salt and serve warm.
