Cuban   -   Red Sauce For Black Beans (Cuba)   adapted from A Taste of Africa

  • 1 Can Black Beans
  • 3 Tablespoons Olive Oil
  • 4 Large Tomatoes -- chopped
  • 4 Cloves Garlic -- chopped
  • 1/2 Teaspoon Sugar
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Basil
  • 2 Teaspoons Oregano
  • Pepper -- to taste
  • 3 Ounces Vinegar
Directions saute tomatoes in olive for 5-10 minutes. stir in all other ingredients except vinegar. simmer on low heat for 30 minutes until sauce is thickened. remove from heat and let stand for 5 minutes. Stir in vinegar. Serve over rice.
